Fall Preschool Recipes:
Crock pot Apple Cider

4 1/3 cups apple juice
1 tbsp. brown sugar, packed
1/2 tsp. lemon juice
1 cinnamon stick (2 inches, 5cm, in length), broken up and crushed in plastic bag
15 whole cloves
1 orange pekoe tea bag (or 1 tbsp., 15 ml loose tea)

1. Combine apple juice, brown sugar and lemon juice in 3 1/2 quart (3.5 L slow cooker. Stir.

2.Tie cinnamon, cloves, and tea bag in double layer of cheesecloth.
3. Add to slow cooker. Cover.
4. Heat on low for at least 3 hours until quite warm.
5.Discard spice bag.
Makes 4 cups (1 L).

Tomato Noodle Soup

1/2 tsp. (2 ml) cooking oil
1/2 cup (125 ml) finely chopped onion
1/4 cup (60 ml) finely chopped carrot
3 cups (750 ml)chicken stock
14 oz.(398 ml)can of diced tomatoes(with juice)
1 cup (250 ml) water
2 tsp. (10 ml)granulated sugar
1/2 tsp.(2 ml)dried oregano
1/2 tsp.(2 ml) dried basil
1/8 tsp.(0.5 ml)pepper
1 3/4 oz. (50 g)Spaghetti, broken up, or elbow macaroni

1. Heat cooking oil in large saucepan on medium-high.
2. Add onion and carrot.
3. Cook for 1 to 2 minutes, stirring often, until vegetables start to brown.
4. Add next 8 ingredients. Stir. COver. Bring to a boil.
5. Add spaghetti. Stir.
6. Reduce heat to medium.
7. Boil gently, partially covered, for 10 to 12 minutes, stirring occasionally, until pasta is tender but firm.
Makes about 7 cups (1.75 L).

Apple Crisp

6 cups (1.5 L) cooking apples, peeled and sliced
3/4 cup (175 ml) granulated sugar

Topping
1 1/4 cups (300 ml) all-purpose flour
3/4 cup (175 ml) brown sugar, packed
1/2 cup (125 ml) butter or margarine
1/2 tsp. (2 ml) salt

1. Fill 10-inch (25 cm) round casserole with apples about 2-3 inches deep.
2. Pour granulated sugar over top.
Topping
3. Mix flour, brown sugar, butter and salt until crumbly.
4. Scatter over sugared apples.
5. Pat down lightly with hand.
6. Bake, uncovered, in 375 degrees F (190 degrees C ) oven for about 40 minutes until apples are tender.
7. Serve with cream or ice cream.

Serves 8 generously.

I made it using green apples, green grapes for the frog's feet and cream cheese rolled into small balls with a chocolate chip on top for the eyes.
