Harvest Theme Recipes
Use these easy harvest theme recipes to make some great food to add to your Halloween alternative preschool theme.
Pumpkin Harvest Loaf:
1/2 cup(125 ml) butter or margarine
1 cup(250ml)granulated sugar
2 eggs
1 cup(250 ml)canned pumpkin
2 cups(500 ml)all purpose flour
1 1/2 tsp.(10 ml)Baking powder
1/2 tsp.(2 ml)Baking soda
1/2 tsp.(2 ml)salt
1/2 tsp.(2ml)cinnamon
1/2 tsp.(2 ml)nutmeg
1/2 tsp.(2 ml)ginger
1 cup(250ml)semi-sweet chocolate chips
1/2 cup(125 ml)chopped nuts
1.Cream butter and sugar in mixing bowl.
2.Beat in eggs one at a time until smooth.
3.Stir in pumpkin>
4.In another bowl combine remaining nine ingredients.
5.Stir to mix then pour into mixing bowl.
6.Stir all together until just moistened.
7.Spoon into greased 9x5x3 inch(23x12x7xcm) loaf pan.
8.Bake in 350 F (180 C )oven for 1 hour until it tests done.
9.After 10 minutes cooling time, turn loaf out to cool on a rack.
10.Wrap.

Zucchini Loaf
3 eggs, beaten until foamy
1 cup oil
2 cups grated zucchini
3 tsp. vanilla
1 1/2 cups white sugar
3 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon
1 cup raisins
1 cup nuts, optional
Mix together first 4 ingredients. Sift together sugar, flour, salt, soda,baking powder, and cinnamon. Add dry ingredients to wet ingredients. Add raisins. Makes 2 loaf pans. Grease pans. Bake at 325 F(160 C) for 1 hour.

Dutch Apple Pie
2 Lbs.(900g)cooking apples, peeled, cored and cut up
2/3 cup(150 ml) granulated sugar
1/3 cup(75 ml) brown sugar,packed
2 tbsp.(30 ml) all purpose flour
1/2 tsp.(2 ml) cinnamon
unbaked 9 inch pie shell
Topping:
2/3 cup(150ml) all purpose flour
6 tbsp(100 ml)brown sugar, packed
1/4 cup(60 ml)butter
1/4 tsp.(1 ml)cinnamon
1/4 tsp.(1 ml)salt
Quarter apples. Cut each quarter in half lengthwise then cut twice crosswise into large bowl. You will need 5 cups(1.12 L).
Add next 4 ingredients and toss. Pour into pie shell.
Topping:
Combine flour, sugar,butter,cinnamon and salt. Mix until crumbly. Sprinkle over pie. Bake on bottom shelf in 400 F (200 C ) oven for 10 minutes. Turn oven to 325 F (160 C) and bake about 50 minutes until apples are tender. Cool.
